Ingredients
For the Chicken
- 4 boneless skinless chicken breasts or thighs
- 1 1/2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 tablespoons avocado oil
For the Creamy Tuscan Sauce
- 3 tablespoons butter
- 5 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup grated parmesan cheese
- 3 cups fresh spinach
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes, optional
- Salt and black pepper, to taste
For Serving
- Garlic spinach
- Roasted broccoli
- Cauliflower mash
- Zucchini noodles
- Extra parmesan
Instructions
Season the Chicken
Pat the chicken dry. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
Sear the Chicken
Heat avocado oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side, until golden and cooked through. Remove from the pan and set aside.
Build the Sauce
Lower the heat to medium. Add butter, garlic, and sun-dried tomatoes to the same pan. Cook for 1–2 minutes until fragrant.
Make It Creamy
Add heavy cream and chicken broth. Stir, then add parmesan, Italian seasoning, and red pepper flakes if using. Simmer until the sauce thickens slightly.
Add the Spinach
Stir in the spinach and let it wilt into the sauce. Taste and adjust with salt and black pepper.
Return the Chicken
Add the chicken back into the skillet and spoon the sauce over the top. Let everything simmer together for 2–3 minutes.
Plate
Serve warm with garlic spinach, roasted broccoli, cauliflower mash, or zucchini noodles. Finish with extra parmesan if desired.
