Ingredients
For the Shrimp
- 1 1/2 pounds large shrimp, peeled and deveined
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon avocado oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- Juice of 1/2 lemon
- 1 tablespoon chopped parsley
For the Parmesan Cauliflower Risotto
- 4 cups cauliflower rice
- 1 tablespoon butter
- 1 tablespoon avocado oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 3/4 cup grated parmesan cheese
- 1 teaspoon lemon zest
- Salt and black pepper, to taste
For the Asparagus
- 1 bunch asparagus, trimmed
- 1 tablespoon avocado oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Juice of 1/2 lemon
Instructions
Season the Shrimp
Pat the shrimp dry. Season with salt, black pepper, and garlic powder.
Cook the Asparagus
Heat avocado oil in a skillet over medium-high heat. Add asparagus, salt, and pepper. Cook for 4–6 minutes until tender-crisp, then finish with lemon juice. Remove from the pan and set aside.
Start the Risotto
In the same skillet, add butter, avocado oil, and garlic. Cook for 30 seconds until fragrant, then add cauliflower rice.
Make It Creamy
Add chicken broth and heavy cream. Simmer for 4–5 minutes until the cauliflower softens and the liquid reduces slightly.
Add Parmesan
Stir in parmesan cheese and lemon zest. Season with salt and black pepper to taste. Keep warm on low heat.
Sear the Shrimp
Heat avocado oil in a clean skillet over medium-high heat. Add shrimp in a single layer and cook for 1–2 minutes per side until pink and lightly golden.
Add Garlic Butter
Lower the heat. Add butter and minced garlic to the shrimp. Toss until glossy and fragrant, then finish with lemon juice and parsley.
Plate
Spoon the parmesan cauliflower risotto into bowls. Top with garlic-butter shrimp and asparagus. Finish with extra parmesan, parsley, black pepper, or lemon zest.
